A little bit about bacon

Bacon in Greek cuisine is very different from bacon in British or Irish cuisine. Bacon here in Ireland and in Great Britain, is like sliced cut pork chop, it includes pork loin and a little bit of belly, but it is leaner than streaky bacon and the default is that is is unsmoked. In Greece, bacon is smoked and thinly cut pork belly and it is usually used as an ingredient in recipes like pizza, calzone, spaghetti shuffle, omelette etc. It is similar to Italian pancetta, only bacon has usually been smoked after having been cured, but both are made from pork belly and both are thinly cut.
