A little bit about beef fillet
Fried or grilled beef fillets is one of the simplest and tastiest dishes. They go very well with freshly squeezed lemon, olive oil or butter, salt, pepper and oregano. Serve them with mashed potatoes or fluffy quinoa and a fresh green salad or steamed and even grilled vegetables and you have an easy, nutritional and tasty dish in less than half an hour. In Greece, we usually cook our meat throughout. Meat that is not well done always goes back to the cook until there is no hint of blood. For some people this is completely unacceptable, as they think beef loses its taste when it is cooked. Others think it is completely unsafe to eat raw meat. After all you don’t eat raw chicken or pork and you don’t think that cooking your chicken throughout takes away from its taste. But I think we can compromise. After having lived in Ireland for a while and having tried less than well done beef, I think that the best way to enjoy it, without compromising its taste or you safety too much, is to have it medium-well. But of course, this is a matter of preference. In any case, a simple thermometer can help you make sure that the fillets are cooked just the way you like them.
