A little bit about olive oil

Olive oil is one of the most important ingredients in Greek cuisine. It is used in almost every dish, both cooked and raw. Especially when eaten raw, its quality is of great importance, because you can taste its subtleties. It is better to just add a little bit of good quality virgin olive oil in a salad, for example, than a lager quantity of bad quality oil. It also deteriorates in high temperatures, so it is better to add it raw on your plate, or after you have removed your pot from the heat, for example. It is also, much, much tastier that way.
